The ancient Egyptian used lemons to fight food poisoning and typhoid epidemics. Romans revered the goddess of youth. Juventus, and symbolized her with the lemon, which enjoyed a reputation as a cure-all and a health tonic and preserver. Inhabitants of Spain and some other European countries regarded lemon as a panacea for infectious illnesses. European used it to resist malaria and typhoid fever. Lemons and limes were carried on English shops to control scurvy on long voyages. Credit goes to Christopher Columbus for carrying lemon seed to the New World.

The small evergreen tree has serrated edged oval leaves, stiff thorny branches, and fragrant white or pale pink flowers. The round or oval green fruits of Citrus limon or Citrus limonum turn sunshine yellow when ripe. A native of India and Asia, this member of the Rutacaea family grows to about 18 feet tall. Lemon trees grow wild in the Mediterranean climate and are cultivated in Guinea, Israel, Italy, North and South America.

Cold expression of the fresh peels of the fruit renders a pale greenish-yellow oil. Its scent is fresh and light, slightly sharp but sweet, with the tat and tangy smell of fresh lemons. About 1000 lemons will yield one pound of oil.
